Lamb Chops and Broccoli

What a perfect way to host friends and family—serving a big platter with a rack of lamb, a couple of broccoli heads, and a beautiful sauce. I've found that having a substantial platter that combines a protein, a hearty vegetable, and a comforting sauce makes hosting both easy and impressive. Cooking most of it outside in my pizza oven also makes cleanup a breeze, so you won’t even mind the few dishes left to wash. I’ve started using my pizza oven for anything that needs high heat, not just for pizza, and the results are fantastic. Everything gets a beautiful char and cooks evenly as the oven retains heat so well. You can definitely make this all on your grill or in an oven set to broil. Let’s go!

Ingredients

For the lamb chops

A rack of lamb

1 tbsp extra virgin olive oil

2 tsp salt

1 tsp hawaij (or curry powder)

1 tsp black pepper

For the broccoli

2 heads of broccoli, peeled stems

1 tsp extra virgin olive oil

Salt

Black pepper

For the sauce

4 anchovies, smashed with a fork

2 tbsp vinegar

2 tbsp extra virgin olive oil

2 tsp mustard

1 tbsp capers, chopped

1 tbsp sumac

1 tsp black pepper

Directions

Step 1

In a medium sized pot, bring water to boil for the broccoli.

Step 2

Making the sauce- in a small bowl, add all the ingredients and mix until combined to a homogenous sauce. Set aside.

1 tbsp capers, chopped

1 tbsp sumac

1 tsp black pepper

Step 3

Moving to the lamb chops- clean your rack of lamb and season all sides with olive oil, salt, black pepper and hawaij.

Step 4

Wrap the exposed bones with aluminum foil to prevent them from burning under the high heat in the pizza oven. Place the seasoned rack of lamb on a cast iron pan.

Step 5

Cut the broccoli in half and boil for 3 minutes, then remove from the water and set on a separate cast iron pan than the lamb. Season with salt, pepper and olive oil.

Step 6

Set your pizza oven to high heat and preheat for 10 minutes. Since most of the cooking will rely on the heat from the fire, and we’ll be flipping the lamb and broccoli in the pans as we go, there's no need for the oven to be fully preheated before starting.

Step 7

Cook the rack of lamb in medium heat in your pizza oven, flipping every 2 minutes, until achieving an internal temperature of 140F or 60C.

Step 8

Remove from the oven and from the pan and place on a cutting board to rest while cooking the broccoli.

Step 9

Cook the broccoli in the oven, flipping every minute until you get a nice charr from all sides.

Step 10

Plating time- spread the sauce on a wide plate, slice the rack of lamb into individual chops and arrange in the plate on the sauce, add the broccoli next to the lamb and enjoy!!!!
