Gluten Free Apple Crumble

Crunchy apple crumble with vanilla ice cream is one of the best desserts that fall has to offer. As a child, I was a pretty picky eater, mostly avoiding fruits and veggies. One of my strongest memories from Rosh Hashanah is my parents trying to convince me to try apple with honey every single year. For a picky eater, eating the fruit in its raw form is not the way to go about it. But as a crumble? With ice cream? Apples caramelized and hidden underneath? How can I resist it? This is, in fact, the way I started my love affair with apples. This recipe is super easy and quick to make. Simply toss the apples in sugar and cinnamon, then top them with a crunchy-buttery-crumble mix. Bake, and top with vanilla ice cream right as it comes out of the oven. Fall, we love you, and we are on our way!

Ingredients

For the filling

5 apples

50 gr sugar

20 gr almond flour

5 gr cinnamon powder

1 lemon, juice

For the topping

140 gr mix nuts, chopped (walnuts, pecans, pistachios)

120 gr almond flour

120 gr butter, cold, cubed

120 gr rolled oats

100 gr brown sugar

5 gr pumpkin spice powder

5 gr salt

For serving

Ice cream

Directions

Step 1

Preheat your oven to 350F or 175C.

Step 2

Cut butter into small cubes and place in the fridge while working on the filling and topping.

120 gr butter, cold, cubed

Step 3

Peel, core, and slice apples into 1/8s.

Step 4

In a bowl combine the apple slices, flour, sugar, lemon juice and cinnamon powder. Mix with your hands until combined. Pour the mix into a lightly greased 9X13 inches baking dish, and spread them out into an even layer. Set aside while you work on the topping.

1 lemon, juice

50 gr sugar

20 gr almond flour

Step 5

Chop the nuts into small pieces. Add to a bowl with the flour, oats, brown sugar, pumpkin spice, and salt. Mix until combined.

5 gr pumpkin spice powder

5 gr salt

Step 6

Add the butter cubes from the fridge and with your hands crumble them to a wet sandy texture.

120 gr butter, cold, cubed

Step 7

Top the apples in the baking dish with the crumble, and don't pack! we want the topping to be loose so it gets the maximum crunch.

Step 8

Bake for 35-40 min or until dark golden.

Step 9

Remove from the oven and let sit for 5 minutes before serving.

Step 10

Scoop a serving and add a scoop of ice cream on top.
