Did you know how effortless it is to whip up your very own energy bar? Not only does it save you money, but the flavor possibilities are endless! My personal favorite blend includes dates, honey, spices, and a generous amount of pistachios. The harmony of these ingredients creates an irresistibly delicious treat, especially when coated in ground pistachios before slicing. In Israel, we have a tradition of snacking on nuts and seeds while watching sports matches, which we fondly refer to as “Pitzuhim” – a name I also love for this snack. Give it a try, and don’t hesitate to customize with your preferred nuts. Make it unique, make it yours!

Ingredients

  • 200 gr pressed pitted dates
  • 200 gr pistachios
  • 120 gr honey
  • 100 gr brown sugar
  • 100 gr almonds
  • 100 gr hazelnuts
  • 100 gr pecans
  • ½ nutmeg, grated
  • ½ tsp cinnamon powder
  • ¼ tsp cardamom powder
  • ½ tsp salt
  • Ground pistachios (for coating)

Lets Start Cooking!

Roast the nuts on a pan on medium heat for 3-4 minutes. Set aside.

Combine honey and sugar together in a small pot and bring to a soft boil. Add the date paste and mix to a homogenous mixture. Remove from heat.

Add the spices and the nuts in the pot, and fold them in to combine.

Transfer half of the mixture onto a parchment paper and roll into a tight log. Chill in the fridge for 30 minutes (repeat with the other half).

Grind pistachios finely and spread on a small plate/baking tray.

Remove the logs from the parchment paper and reshape them to a prefect log. Roll in pistachios.

Slice and enjoy.
