In a medium sized pot, bring water to boil for the broccoli.
Making the sauce- in a small bowl, add all the ingredients and mix until combined to a homogenous sauce. Set aside.
Moving to the lamb chops- clean your rack of lamb and season all sides with olive oil, salt, black pepper, and hawaij.
Wrap the exposed bones with aluminum foil to prevent them from burning under the high heat in the pizza oven. Place the seasoned rack of lamb on a cast iron pan.
Cut the broccoli in half and boil for 3 minutes, then remove from the water and set on a separate cast iron pan than the lamb. Season with salt, pepper, and olive oil.
Set your pizza oven to high heat and preheat for 10 minutes. Since most of the cooking will rely on the heat from the fire, and we’ll be flipping the lamb and broccoli in the pans as we go, there’s no need for the oven to be fully preheated before starting.
Cook the rack of lamb in medium heat in your pizza oven, flipping every 2 minutes, until achieving an internal temperature of 140°F or 60°C.
Remove from the oven and from the pan, and place on a cutting board to rest while cooking the broccoli.
Cook the broccoli in the oven, flipping every minute until you get a nice charr from all sides.
Plating time- spread the sauce on a wide plate, slice the rack of lamb into individual chops and arrange in the plate on the sauce, add the broccoli next to the lamb and enjoy!!!!
YASSS!
