When I want to bring a touch of color to my meal, I always add a type of beet dip. This time I wanted to give it an extra creamy texture and a kick in flavor. After caramelizing the beets in the oven, I blend them with some soft goat cheese. The combination of the flavors here are absolutely magical and a must to try. Also the texture? Very unique – totally silky!

Ingredients

  • 3 ½ large beets
  • 3 ½ teaspoon of brown sugar
  • 100 gr soft goat cheese
  • Atlantic sea salt
  • Extra virgin olive oil
  • Freshly ground black pepper

Lets Start Cooking!

Preheat your oven to 450°F or 240°C.

Wash the beets carefully.

Wrap each beet in 2 layers of aluminum foil with a teaspoon of brown sugar for each beet.

Bake the beets for an hour.

step 5

In a blender, combine all the ingredients together. You should add the beets hot as we want them to melt the cheese completely.

Serve with a freshly baked pita!
