Pide (With Two Different Fillings)


After a week's break from baking, I'm back with a lit dough for you guys! PIDE! A kinda Turkish Pizza. Pide is a flatbread usually baked with toppings in a stone oven. Pide and its various varieties are widespread throughout Turkey. It is an established and culturally significant food. This dough is dangerously tasty. I decided to make two types of fillings - one with cheese and one with meat. BUT it is up to you! Fill it with whatever makes your heart sing. The whole process is very quick and it takes about 2 hours from kneading to the perfect bite. The recipe yields 8 pides.


Ingredients:


For the dough-

500 gr flour

375 ml water

20 gr sugar

15 gr yeast

10 gr salt


For the cheese filling-

A bunch of spinach

Sheep feta cheese

Grated Mozarella


For the meat filling-

250 gr ground beef

1/2 onion

1/2 green pepper

1 small tomato

Black pepper

Salt

Maras biber (chili flakes)


Preparation steps:


- In a bowl add water, yeast, and sugar. Mix well.


- Add the flour and mix well until all incorporated.

- Add the salt and keep kneading for another 7 min until the dough is elastic and sexy.


- Round the dough and place in a greased bowl to rest until double in size (should take around 45 min).

- In the meantime, make the fillings:


- Chop the onion, pepper, and tomato. Cut the spinach stalks.

- In a pan- fry the veggies with oil. Add the spices.


- Add the ground meat and cook it all for 3 minutes. Remove from the heat and let it cool down.

- Wash the spinach and cook in a pot. The amount of water that remains on the leaves (from the wash) is enough to steam the spinach.


- Cook the spinach until it collapses onto itself. Remove for the heat and let it cool down. Then add the cheeses.


- Now, back to the dough, punch it, and divide to 8 pieces of 100 gr.


- Round each piece to a little tight ball.

- Cover with a towel and let it sit for 15 min. Preheat the oven to 475F or 250C.


- Using a rolling pin - open each ball to a rectangle shape.


- Place the dough sheets on a baking tray. Place the filling on top.

- Fold 2 cm of the dough sheet toward the center. Close the edges.


- Brush with egg.


- Bake for 12-14 min.


- Brush with melted butter as soon as you take them out of the oven.

- Cut and enjoy with your lovers!
