Babka Pizza

People have been asking me quite frequently for a pizza recipe for a home oven - in my opinion, pizza needs a very hot oven that usually you don’t have at home.
BUT WAIT!!!! I found you the best solution. Babka Pizza.
You will never go back.
Ingredients:
For the dough-
500 gr pizza flour
220 gr sour cream
100 gr sugar
10 gr dry yeast
2 eggs
100 gr salted butter
For the filling-
500 gr passata
100 gr tomato paste (from a tube)
300 gr cheese
2 cloves of garlic
Basil leaves
Pinch of salt

Preparation steps:
- Half an hour before you start preparing this magic, melt the butter and let it cool down. Don’t use it before it has cooled!
- In a mixer bowl pour flour, yeast and sugar. Mix well.
- Add the eggs and sour cream.
- In a stand mixer, start to mix on the lowest speed until the dough starts to come together.
- Add the butter to the dough in pieces. Let the dough absorb the butter and continue to add more until there is no more.
- After adding all the butter, up the speed of the mixer one notch faster. Knead for 10-12 min.
- Round the dough and place in a box. Put the box in the fridge for the next day.
- The following day, take the dough out of the fridge and divide in two. It will and should be a stiff dough. While working on one piece, place the other one back in the fridge.
- Open the dough with a rolling pin to a thin layer.
- Crush two cloves of garlic and basil and add to the passata.
- Spread some tomato paste and the passata onto the dough. Distribute using a scraper.
- Spread the cheese on top of the sauce. It will absorb the sauce a bit and will help us to roll and braid the babka.
- Roll the dough and place in the freezer for 45 min. It will help us to cut through it.
- Repeat the same process with the other piece of the dough.
- After both rolls cool cut them down the middle with a bread knife.
- Braid them and place the pizza babka in a round baking tray.
- Let the babka proof for about 2 hours.
- Preheat the oven to 365F or 185C.
- Spread water and oregano on top and bake for 45 min.

- Take the babka out of the oven.
- Cut to a slice. Basil, Parmigiano Reggiano, olive oil.
