When I get back from the gym in the morning, I’m always on the hunt for the healthiest, most protein-packed breakfast. During the week, it’s usually burritos or tuna melts, but on weekends, I love making these protein pancakes. Since breakfast is something I love sharing with my family, I thought—why not make it even more fun? So, I started putting the pancake batter in a squeeze bottle and drawing Mickey Mouse heads right on the pan. It’s super easy, and watching them take shape is just as fun as eating them. I love it. My daughter loves it. And I know you will too!

Ingredients

  • 300 gr milk
  • 110 gr oats flour
  • 100 gr cottage cheese
  • 2 eggs
  • 2 tsp baking powder
  • 1 tbsp honey
  • 1 tsp vanilla paste
  • of salt
  • 1 tsp olive oil (for the pan)
  • Maple syrup (for serving)

Lets Start Cooking!

In a food processor, blend all the ingredients (besides the maple syrup) until smooth.

Transfer the batter to a squeeze bottle for better control when you’re making Mickey Mouse-shaped pancakes.

Heat a wide, flat pan over medium-low heat. Add a little olive oil, then use a paper towel to spread it evenly across the pan for minimal oil coverage.

For the Mickey Mouse shape, squeeze circles of batter onto the pan, spacing them about 2 inches apart. Let them set for 10 seconds, then add two smaller circles on top of each to create Mickey’s iconic ears.

Flip after 30 seconds and cook the other side for another 20-30 seconds. Then, remove from the pan.

Serve immediately with maple syrup.
