Soda bread is one of the quickest and easiest breads to make. It takes less than an hour from start to finish, and the result is so satisfying. This soda bread is particularly special. There is something about this combination of flavors that simply makes every bite wonderful and exciting. Between the toasty and velvety Guinness beer, the sour and tangy buttermilk, the oats and figs – there is a lot of fun at hand! So what happens when you put these sexy ingredients together? A semi-sweet, semi-savory bread that goes exceptionally well with butter or as a sandwich. You, Gingis, now have zero excuses not to make it, as it is the quickest bread to make and doesn’t require any special kitchen tools!

Ingredients

  • 275 gr whole wheat flour
  • 225 gr buttermilk
  • 100 gr oats (not instant)
  • 100 gr brown sugar
  • 70 gr melted butter
  • 45 gr white flour
  • 40 gr dried figs
  • 20 gr baking soda
  • 7 gr salt
  • 5 gr baking powder
  • 1 bottle of Guinness beer (room temperature)

Equipment

2 bowls

Lets Start Cooking!

Preheat your oven to 400°F or 200°C.

In a bowl, mix the dry ingredients- whole wheat flour, white flour, oats, brown sugar, baking soda, baking powder and salt. Set aside.

In a separate bowl, mix the wet ingredients until combined- beer, buttermilk and melted butter. The beer needs to be in room temperature, otherwise it will harden the melted butter.

Add chopped dried figs and fold them in.

Pour the wet ingredients into the dry ingredients and mix until combined. The mixture texture should look more like a thick cake batter than a bread dough.

Pour the soda bread mix into a greased rectangular cake pan.

Using a spatula, flatten the top and sprinkle some oats on top.

Bake for 45-50 minutes, or until the bread has passed the toothpick test.

Remove from the pan and let it cool completely on a rack.

Slice very thick pieces and serve with lots of butter.
