Cut the watermelon into 1/2 inch size cubes. Add them into a mixing bowl.
Chop the cilantro, parsley, and mint as thin as possible. Add into the mixing bowl.
Zest the lemon into the mixing bowl. Cut the lemon in half and squeeze all the juice into the mixing bowl.
Season with salt, black pepper, and extra virgin olive oil.
Add 1-2 tbsp of yogurt in the middle of the serving plate, and with the spoon spread the yogurt to the side of the plate in a circular motion.
Add the salad on top of the yogurt and drizzle more extra virgin olive oil.
