Here is a salad that can be eaten as a main dish or as a side, and no matter what, there is no chance that it won’t be completely devoured. Fattoush is one of the sexiest salads you can celebrate the summer produce with!

Crunchy roughly cut veggies combined with a bunch of herbs and toasted (or fried) pieces of pita. Fattoush belongs to the family of dishes known as fattat, which uses stale flatbread as a base. The seasoning for the salad is based on strong lemon juice and sumac, while some recipes also add pomegranate molasses along with the sumac. A nice topping you can add to the salad is crumbled young brined cheese such as feta, it takes it to a whole new level.

Ingredients

  • 1 pita
  • 2 cucumbers
  • 3 tomatoes or cherry tomatoes
  • 4 radishes
  • ¼  red onion
  • 3 spring onions
  • ½ bunch of parsley
  • ½ bunch of mint
  • ½  lemon, juiced
  • 1 teaspoon of sumac
  • 1 tablespoon of za’atar
  • Salt
  • Black pepper
  • Extra virgin olive oil
  • Toasted pistachios
  • Feta cheese (optional)
  • ¼  teaspoon chili pepper (optional)

Lets Start Cooking!

step 1

Open a pita in half, brush with olive oil and sprinkle with za’atar.

Toast in a preheated oven (360f or 180c) for about 8 min.

Cut tomatoes, cucumbers and radishes into rough pieces.

Slice the red onion and the spring onions as thin as you can. Same for the chili pepper if you want your salad to have a nice kick.

Finely chop the parsley and mint.

Toast the pistachios for 3-4 min on a pan.

In a bowl add all the veggies and the herbs and season with lemon juice, salt, black pepper, sumac and olive oil

Break the pita on top of the salad.

Crumble the feta cheese on top.
