Preheat oven to 180°C or 350°F.
In a bowl, separate the egg white from the egg yolks. With the egg yolks, make pasta 🙂
Add the rest of the ingredients to the egg whites besides the flour.
Whisk well until frothy.
Add the flour and mix well until you get a homogeneous batter, should be a little thinner than a pancake batter.
Place 1 tablespoon of batter onto a baking sheet and use a spoon to spread into a nice circle.
Repeat with another batter circle, do not make too many, because you just have a little time to fold them.
Bake for 10 minutes or until the edges become golden brown. In the meantime, prepare your fortune cookie’s liners.
Work quickly, fold the cookies in half.
Use the side of your baking tray to fold and bend the cookie into a fortune cookie shape.
Place the folded fortune cookies in a small bowl or muffin pan to hold the shape until firm, takes about 2 minutes.
